Coconut Macaroons
2 cups walnuts, presoaked
1 cup almonds, presoaked
1 cup shredded coconut
12 pitted medjool dates
1 pear
2 teaspoons vanilla
1½
teaspoons almond extract
¼ teaspoon powdered
stevia*
Process the nuts, coconut, dates and
pear through a juicer using the blank screen. Mix in the vanilla
and almond extract and then spoon onto dehydrator trays lined with
parchment paper (I prefer not to use plastic when I can avoid it
and the parchment paper works great). Dehydrate for 10-12 hours at
105 degrees,
Remove from dehydrator and place an
empty tray on top of each tray, flip over and remove the parchment
paper. Return to dehydrator
and
continue to dehydrate
for another 3-4 hours.
These are best done the night before
so the first dehydration can be done during the night.
Makes about 2 dozen
* Every brand of stevia has a
different level of sweetness so you will need to test it first to
really know how much to add. When you have the correct proportion
you should not be able to taste the stevia, it should just
increase the sweetness of other sweeteners so you don't have to
add as much of them.
