Apple Pancakes
2 apples
2 cups walnuts,
presoaked 6-8 hours
2 cups pecans,
presoaked 6-8 hours
9 medjool dates
½ cup raisins,
presoaked 1 hour
¼
cup raw honey
2 teaspoons vanilla
1 teaspoon cinnamon
½ teaspoon powdered
stevia*
Process apples, walnuts,
pecans, dates and raisins through a Champion or Omega Wheatgrass Juicer using
the solid screen. Mix in the remaining ingredients.
Spoon
silver-dollar-sized rounds of the mixture onto
dehydrator trays lined with parchment paper (I prefer not to use
plastic when I can avoid it and the parchment paper works great). Dehydrate 4-6 hours.
Remove from dehydrator and place an empty tray
on top of each tray, flip over and remove the parchment paper.
Return to dehydrator
and
continue to dehydrate
for another few hours or until consistency is suitable.
Makes
about 3 dozen pancakes.
*Every brand of stevia has a
different level of sweetness so you will need to test it first to
really know how much to add. When you have the correct proportion
you should not be able to taste the stevia, it should just
increase the sweetness of other sweeteners so you don't have to
add as much of them.
