Smoked Mushroom Spinach Salad
with Honey Dijon Dressing
1 large Portabella mushroom (you may
substitute with zucchini if you prefer)
2 tablespoons olive oil
1 teaspoon Liquid Smoke
1 tablespoon garlic, chopped
1½ bunches of Spinach, stems removed and chopped
or torn into smaller pieces
1/3 cup raw, shelled pumpkin seeds
1/3 cup walnuts, chopped
Dressing
¼ cup olive oil
2 tablespoons Dijon mustard
2 tablespoons honey
1 tablespoon Balsamic vinegar
1 tablespoon
Braggs Liquid Aminos
1 tablespoon Savory Magic
1 teaspoon garlic, chopped
Chop up the Portabella mushroom and place in a bowl with the olive oil, Liquid
Smoke and garlic, and allow to marinate for at least an hour. Then place in a
dehydrator for 1-2 hours at 105 degrees.
Wash
spinach
and discard stems (or save for juicing). Chop into bite size pieces and place
in a salad bowl. Add pumpkin seeds and set aside.
Place all
the ingredients for the dressing in a blender and blend at high for 1-2
minutes.
Pour
the dressing over the salad and add the mushrooms. Toss until thoroughly
blended.
Serves six

Ancient Herbal Text Leads To Potential New Anti-bacterial Drug

A unique Mayo Clinic collaboration has revived the healing wisdom of Pacific
Island cultures by testing a therapeutic plant extract described in a 17th
century Dutch herbal text for its anti-bacterial properties. Early results
show that extracts from the Atun tree effectively control bacteria that can
cause diarrhea, as claimed by naturalist Georg Eberhard Rumpf, circa 1650. He
documented his traditional healing methods in the book Ambonese Herbal.

New Research
Identifies Human Enzyme That Could Be Programmed To Kill Cancer

A new study conducted by scientists at Children's Hospital Oakland Research
Institute (CHORI) identifies a specific enzyme that can cause the death of
cancer cells. Researchers studied the behavior of an enzyme called sphingosine
phosphate lyase (SPL), which can regulate cell growth and death by lowering
the levels of a natural, growth-promoting lipid called
sphingosine-1-phosphate, or S1P.

Optimists May
Have Longer Lives

NEW
YORK (Reuters Health) - Optimists may enjoy longer lives than people with a
dimmer outlook on the future, a long-term study suggests.
Researchers found that of nearly 7,000 adults followed since their college
days in the 1960s, those who were optimistic in their youth had a lower risk
of dying over the next 40 years than their more pessimistic peers.
On
average, the most pessimistic study participants were 42 percent more likely
to die of any cause than the most positive participants, according to findings
published in the Mayo Clinic Proceedings medical journal.

Staying Lean May Help Body
Reject Cancer Cells

WASHINGTON — Fatty tissue may
decrease the body's ability to kill off cancer, says a study that found making
mice leaner — through exercise or surgery — seemed to help them fight skin
tumors.
Scientists have long known
that people who are overweight are at increased risk of certain types of
cancer. The question is why, and whether slimming down will lower that risk or
do any good after a tumor forms.
Rutgers University scientists
took a closer look at that question using mice engineered to get skin cancer,
and reported Monday that fat cells may secrete substances that short-circuit
one of the body's main anti-tumor defenses.
