Coconut Macaroons
2 cups walnuts, presoaked
1 cup almonds, presoaked
1 cup shredded coconut
12 pitted dates
1 pear
2 teaspoons vanilla
1½
teaspoons almond extract
Process the nuts, coconut, dates and pear through a juicer using the blank
screen. Mix in the vanilla and almond extract and then spoon onto a solid
dehydrator sheet. Dehydrate for 10-12 hours at 105 degrees, then place on a
perforated dehydrator sheet and dehydrate for another 3-4 hours.
These
are best done the night before so the first dehydration can be done during the
night.
Makes about 2 dozen

Toxic for Dogs

A sugar substitute found in a variety of
sugar-free and dietetic cookies, mints and chewing gum is proving highly
toxic, even fatal, to snack-snatching dogs.
Xylitol, popular in Europe for decades but a
relative newcomer to the U.S. alternative-sweeteners market, can be "very,
very serious" to dogs when ingested, says Dana Farbman, spokeswoman for the
Animal Poison Control Center of the American Society for the Prevention of
Cruelty to Animals.
"It doesn't take a whole lot (of xylitol), and
the effects are so rapid that the window of opportunity to treat the dog is
extremely small," Farbman says.
